A day in the life of the fire

One fire runs the whole kitchen

  1. Early

    The oven is lit

    Split oak goes in before anyone else arrives. It takes hours to bring the dome up to heat.

  2. Morning

    Bread, at full heat

    Sourdough bakes straight on the oven floor while the fire is at its fiercest.

  3. Afternoon

    Braises, as it falls

    Short rib and stocks go in as the heat eases off, and sit there for hours.

  4. Service

    The grill takes over

    Coals are raked under the grill, and vegetables are buried in the embers beneath.
